WHY IS TEMPERATURE CONTROL SO IMPORTANT?
The optimal temperature for long-term wine storage is 55–57°F, whether you are storing red, white, rosé, or Champagne. At this temperature, wine can mature slowly and naturally, allowing acidity to mellow and tannins to soften while preserving the wine’s balance, character, and complexity. Temperature fluctuations can be especially damaging. When wine is stored too warm or too cold, different components may age at different rates, potentially resulting in a disjointed or unbalanced wine. Extended exposure to excessive heat can be particularly harmful—just a few hours at temperatures approaching 80°F can negatively affect a wine’s character, producing unwanted “stewed” or cooked-fruit flavors. Fortunately, a brief period at a moderately warmer temperature, such as 65°F, is unlikely to cause a noticeable difference. The key to protecting your collection is maintaining a consistent, properly controlled environment that allows your wines to age gracefully over time.
To help ensure the quality of your wine, Cellar Masters also offers annual service contracts to maintain the optimal operation of your cooling system after installation.
